Friday Favorites

This is Camila, or as my girls like to call her, “Cutie Camila”. She is the happiest, smiliest, sweetest little 5 month old I know and I could sit and talk to her for hours. Or until she needed her mom.

Well, I guess maybe I should share my meatball recipe now? I’ve been using this easy recipe for years and it’s guaranteed to make your meatball-loving kids day:

1 lb lean ground beef // 1/2 c finely chopped onion // 1/4 c dried bread crumbs // 2 garlic cloves, minced // 1 egg // 1/4 c finely grated parmesan cheese // 3 tbsp ketchup // 1 tsp salt // 1/4 tsp pepper

Preheat oven to 400 and spray a cookie sheet with cooking spray. Mix together all ingredients except ground beef, adding the meat when other ingredients are blended. Add the meat and gently combine, taking care to not overwork. Form into balls and bake for about 15-20 minutes.
