I remember the first time Ben joined my family for Thanksgiving dinner, and he declined the corn. I thought it was weird, because….who doesn’t like corn? Being my nosy self I asked him why he didn’t like it and he told me he doesn’t like canned corn. I thought he was just being picky, and meant he only ate corn right off the cob. BUT THEN, after we were married I was introduced to freezing corn on the cob. And you guys, I can’t eat canned corn anymore. It ruins you. We used to do one really big day of freezing corn. Ben would pick a few truckloads of corn and my mother-in-law, sister-in-law, sometimes the neighbors, or unlucky visitors, and myself would spend all day husking, cooking, cooling, cutting, and packing the corn. By the end of the day we were all a sweaty, sticky mess, along with the kitchen and garage.
Now, we’ve discovered it’s easier to just pick some extra ears each night, and make a couple bags after dinner. Whatever we don’t eat gets cut up and placed into freezer bags. Hardly any mess, and a couple bags every night adds up to all we need for the rest of the year. And the kitchen floors aren’t covered in a thick layer of corn juice. And yes, it tastes just as good as eating it right off the cob. So the next time you pick up some corn on the cob, do yourself a favor and get an extra dozen. Cook all of it for dinner, let the extra ears cool down, then cut off the kernels and stick them in a freezer bag. You’ll thank me in January. 😏
