Today I’m linking up with Shay and Erika to talk about fall recipes, and I’m anxious to get some new ideas from others. Do you ever get into a slump when it comes to figuring out what to eat every day? I mean seriously…I need to feed these people EVERY. SINGLE. DAY. But it is nice to change things up with each season.
This time of the year is tricky, because twice a week I need to feed a bunch of hungry fellas in the middle of a field (yay for harvest😜). They’re usually eating on the go, so cutting up a chicken breast smothered in duck sauce is not particularly appreciated. Enter all the crock pot meals and casseroles.One of their favorites meals is a classic chicken pot pie. I’ve been using this recipe for years, but I do add a few more spices to give it a bit more flavor.
A friend shared this cheeseburger casserole recipe with me a couple years ago and it is so good- tastes exactly like a cheeseburger!
Another one of their absolute favorite meals? These beef hand pies. They are a labor of love when you’re making 16 of them, but so worth it.
Soups are a good option too, and we all love this simple tortellini one.
As far as desserts go, I make these pumpkin dessert bars several times during the fall season and they never last long.Ingredients:
Yellow cake mix
3 eggs
5 oz evaporated milk
1/2 c butter
1 can pumpkin pie mix
1/2 c sugar
1/4 c flour
3 tsp cinnamon
In a large bowl, combine cake mix, 1 egg, and butter. Reserve 2/3 c for topping, and spread the rest into a greased 9×13 dish. Using a mixer, combine pumpkin pie mix, remaining eggs, and milk. Pour over crust. Add sugar, flour, and cinnamon to reserved cake mixture and combine until crumbly. Spread over pie filling. Bake at 350 for 45-50 minutes.
