It’s Ben’s 40th birthday today! I had planned on having an 80’s themed bash at our house for his birthday…but obviously that’s not happening. If we’re being honest, he’s pretty relieved about that and feeling thankful to corona for thwarting my plans. I was seriously looking forward to rocking some 80’s vibes, though. We’ll be celebrating with a much more low-key party tonight instead. But to start the day off, today’s favorites are all about Ben!

I asked the kids what their favorite thing was about Ben and they each said the same things: he’s funny and gives great massages.
Favorite clothing item:
Unfortunately, Ben’s favorite shirt is that teal Miami Dolphins t-shirt. It’s obviously not a lucky shirt, however, because we all know the Dolphins never win.
Favorite food:
Ben likes a lot of food, but his favorite would be prime rib and Yorkshires. This is my go-to Yorkshire recipe (which may not be quite up to the standards of my English friends):
1 cup flour
4 eggs (room temp)
1 cup milk (room temp)
1/2 tsp salt
In a medium bowl, combine ingredients to form a smoother batter until air bubbles form on top. Don’t worry about lumps. Let batter stand for a half hour and preheat oven to 425. When the oven is ready, place about 1/2 tsp oil into each compartment of a muffin tin and place in the oven. Allow oil to get hot (it should be smoking) and then take out of the oven. Immediately pour about 1/4 cup batter into each compartment as quickly as you can and place back into the oven. Allow to cook for about 20 minutes, or until golden and puffed up (they’ll get huge, and then quickly deflate as soon as you remove them from the oven). Enjoy!

Favorite moment:
I love watching Ben teach the kids. Whether it’s how to ride a bike, play baseball, toss grass seed, or memorize a Bible verse- he’s a great teacher. I’ve always said if he wasn’t a farmer he would make a fantastic middle school teacher.
